African Thanksgiving Turkey

I know that many of you won't agree on eating so many turkeys ....
but this is a tradition that has to be held!

This a new way to cook Turkey:   TURKEY WITH RICE AND KHALTA
serves 6-8
1 turkey of 1-1,5kg
45ml flour
15ml mustard
60ml sugar
125g butter
250ml Egyptian rice
1 chicken stock cube, dissolved in:
250ml hot water
125ml flaked almonds
125ml eachrasins and sultanas

1- Rub turkey wiht flower, leave to stand, then rinse with water. Rub with mustard. Roast at 180° C for 2 to 3 hours, depending on the size of the turkey.

2- Melt the sugar and butter together until brown.

3- Add the rice and stir to coat. Add the stock and heat until boiling. Lower heat and simmer for 20 minutes or antil the rice is cooked.

4- Spoon the rice on to a large platter and place the turkey oon top. Scatter the nuts, raisins and sultanas on the rice.

Egyptian rice has shorter grains than American rice. For the latter, use 2 cups of water to 1 cup of rice.
