Beef Tajine With Prunes
Serves: 6 - 8
45 ml olive or sunflower oil
1 large onion, chopped
2 garlic cloves, crushed
1 g stewing beef, cut into large portions
50 ml chopped parsely
5 ml ground cinnamon
5 ml ground cumin
3 ml ground ginger
10 ml freshly ground black pepper
3 ml tumeric
750 ml water
250 g prunes, halved and stoned
15 ml clear honey
salt to talse
toasted sesame seeds
chopped almonds
You may use a Tajin Pot for any of your usual stew ! It is great and you just need to add some prunes, halved and stoned to make the meat juicer ! Try it even your usual way !
1) In a large saucepan or in your Tajin Pot, heat the oil and stir in the onions, garlic, beef, parseley and spices. Cook until the meat is browned all over.
2) Stir in the water and simmer, covered with its colored top, for about one and a half hour until the meat is tender.
3) Add the prunes, honey and salt. Cover again and simmer for a futher 30 minutes.
4) Serve on couscous and garnish with sesame seeds and almonds.
